Our family loves Mexican food and we are always on the hunt for a good authentic place to try. We have found a few local favorites here that are pretty good, but they don’t know us by name or our order like Oya. Good old Oya Grill, we miss you!
During a recent trip to one of our favorites we ordered the Table Side Guacamole. We weren’t sure exactly what that meant, but why not, right. The waiter wheeled out this cute little cart filled with bowls of individual ingredients and made the guacamole right at our table, hence the name, Table Side Guacamole.
It was a big hit so we decided to see if we could make it ourselves. Here is our version, Fresh Homemade Guacamole, let me know what you think.
Fresh Homemade Guacamole
INGREDIENTS
*This recipe doesn’t use exact measurements, adjust to taste based on your preferences
1 large Avocado (soft to the squeeze)
1/2 small Onion diced
1-2 Roma Tomatoes diced
Cilantro – finely chopped
Bacon chopped – its strange, but don’t leave it out
1 Lime cut in half for the juice (concentrated lime juice can be substituted)
Red Pepper Flakes
Garlic Salt
Garlic Powder
Cayenne Pepper
Black Beans, Corn, Jalapeños, Minced Garlic (optional)
Tortilla Chips
DIRECTIONS
Dice onion, tomatoes, cilantro and bacon (we cheated and used packaged bacon pieces)
In a small bowl combine the diced ingredients
Half the avocado, score horizontally and vertically
Lightly scoop into the bowl with the other ingredients
Sprinkle red pepper flakes, garlic powder, garlic salt, and cayenne pepper – add a little and adjust to taste after all ingredients are combined
Squeeze 1/2 lime juice into mixture
The spatula is key!
Lightly chop and fold with a wooden spatula to blend the ingredients, don’t stir
Add more cilantro and spices to taste
Top with the juice from 1/2 lime
*Optional Garnish: Chopped onion, tomato, cilantro flakes and sliced/diced jalapeños

TIPS:
- Let the avocados ripen just to the point they are soft, not mushy
- The wooden spatula is key for chopping to get the right consistency
- For an extra kick, add a few shakes of Slap Your Mama cajun spice
- Packaged bacon bits work great
- Do I even need to say…..Margarita or Corona is suggested
