Growing up as a kid so many of my memories involve food….recipes, places to eat, Grandma’s cooking, cruising around on my banana seat bike with my ice cream cone running down my arm, all those happy things. This recipe is a blast from the past and now a new favorite at our house. They are a peanut butter and chocolate lovers dream. Give them a try and let us know what you think!
PEANUT BUTTER BARS
INGREDIENTS
2-3 cups crushed graham crackers (about 2-3 individual packages – use more if you prefer more of a crunchy crust, less if you like it more dense, either way it is good!)
1 1/2 cups creamy peanut butter
2 cups powdered sugar
1 3/4 sticks margarine, melted
1 – 12 ounce bag chocolate chips
DIRECTIONS
Crush graham crackers (the blender works great to get a fine crush)
Combine the crushed graham crackers, melted margarine, powdered sugar & peanut butter in a large bowl
Stir until well mixed
Grease a 10×14 pan
Press the graham cracker mixture into the pan smoothing the top with a spatula
Place the pan in the fridge or freezer uncovered (it will only be in there for a few minutes to help it set faster)
Melt the chocolate chips in a microwave safe bowl until smooth and creamy
Remove the graham cracker mixture from the freezer/refrigerator
Spread the melted chocolate chips over the graham cracker crust
Refrigerate until the chocolate has hardened and set

TIPS
- Don’t skimp on the ingredients, go for the name brands
- Grab an extra spoon (or spoons) to “sample” the graham cracker mixture (no legitimate reason other than it’s really good)
- Use cookie cutters to cut in fun shapes or dare we say…..peanut butter cups
- Refrigerate in an airtight container (they can be kept at room temperature, if not too humid)
- Buy double the ingredients – these won’t last and you’ll want more
These are so easy, use very few ingredients, don’t require baking and are you can whip them up in a matter of minutes. Yum!
